I think as much as I have trouble dealing on a day to day basis, I still wouldn't change who I have become and who I still have yet to become. I am finally getting to a point where can truly say that I love me. This has been quite the journey and I don't think that I would change anything. It's been challenging to say the least on most days. I am me and I am content with where I am right now. I know that I am not perfect. I know that I have flaws. I know that I could choose another person to be, but what good would that do? I am me after all.

I think that I am finally becoming comfortable with who I am. I am finally at a point in my life that I know things are getting better. Do I still have bad days? Yes! I know this is not likely to change soon, but I am comfortable with where I am right now.

The Midwife’s Choice

The Midwife's Choice by Delia Parr was a very good book.

Basically the moral I got from the story is that you have to live with the choices you make, so make sure they are good ones. The story is about a midwife who lost her husband and was trying to deal with this. In the meantime, her daughter ran away, her son was in another state working with her brother, and the place they were staying in had burned down so she was living with friends. This book talks about choices that a person may make on a daily basis that could affect the entire life. We need to make good choices to have a good life. I loved the way the author points this out without actually stating the fact.

A very good read!

Make Over Your Mornings Day 2

So the project for day 2 is to jump start your morning with a bed time routine. I always wake up to dishes in the sink and a cluttered living room. To make my mornings better I would need these 2 things done the night before. Starting tonight I will be doing both before bed time of 10 pm. Hopefully this will help to streamline my mornings a bit more. I will have less to do when I get up in the morning meaning that I will have more time to get to things that really matter to me such as my blog and school. The final item on my bed time routine will be to set up the coffee pot the night before. I do this already some nights, but to make a habit of it would be nice. I don't like to have to wait for my coffee in the mornings. If I set it up the night before I don't have to.

So, that is my progress so far in the 14 day course. More to come later.

Fresh Start

So, I've been feeling kind of stuck for a while now and very into procrastinating (especially when it comes to my schoolwork). I found a course online titled "Make over your Mornings". The course is 14 days long and it does cost $9.00 to join. You get access to videos and a workbook to use through the 14 days. I am hoping that this will help to put in a better frame of mind throughout the day and maybe give me a jump start on what needs to be done every day.

I will make a short post each day about the project for the day and how it appears to be helping (or not) as I go through. Today's project was to set a time each day over the next 14 days to do the course so I have pened it into my planner every week day. Today's project also said we were to tell someone about it to help keep us accountable so this is my way of doing that.

Chicken Enchilada

This is an amazingly easy dinner (and it tastes great too)! I got this recipe from my sister and have used it for years now.

1lb boneless, skinless chicken

1 jar salsa (I prefer Pace but any brand will work)

corn or flour tortillas

Shredded cheese of your choice

Red or green enchilada sauce

  1. Boil chicken until tender and falls apart (about an hour).
  2. Preheat oven to 350.
  3. After chicken cools, shred.
  4. Place chicken in a large skillet and add salsa (enough to coat all chicken, about 1/2 jar) and warm.
  5. If using corn tortillas, put a small amount of enchilada sauce into a small fry pan and heat.
  6. Place corn tortilla into sauce and heat till warm flipping once.
  7. Place tortilla into cake pan.
  8. Layer with chicken and cheese.
  9. Roll
  10. Repeat steps 6 through 9 until you have as many as you want or until chicken is gone.
  11. For flour tortillas, simply layer with cheese and chicken, roll and place in pan.
  12. Pour remaining enchilada sauce over the rolled enchiladas.
  13. Top with remaining cheese.
  14. Place in oven for about 10 to 15 minutes or until cheese is melted and bubbly.
  15. Serve with beans and rice.

All told from start to finish it takes about an hour and a half. If you don't have time to wait for the chicken to cool, use 2 forks to shred. These are amazing! If you try this recipe I would love to hear what you think about it.

Anxiety

I hope this finds everyone doing great!

After a rough week with my anxiety, I am thankful to report that this week has been better. I have set an alarm on my phone to try to help to remember my meds, which so far has worked pretty well. Also a comment in response to my post last week by Getting Through Anxiety really helped greatly. So, all in all I think this week has been better. I think one New Year's resolution for this year will be the remember to take my meds and remember to take care of me. Since, I care for my Dad right now, I forget to take care of me quite often (which is probably why I ended up sick just before Christmas and can't seem to shake it). I have to remember that if I don't care for myself I can't care for anyone else. As a people pleaser this is a very hard thing for me to remember, as I'm sure others can relate to this.

So, in summary, next year I think will be about me for a change...lol. I need to start taking better care of myself so that I can take better care of my family.

Finally!

So, Christmas is finally over! Did you get everything you wanted for Christmas? I know that I did. My hubby got a stand mixer. I have always wanted one. He also got me a wool neck protector that goes on the seat belt in the car.  I am so short the seat belt doesn't fit me right, it always rubs on my neck and hurts if I'm in the car for too long. He has been talking about getting one for me for quite some time and finally did.

So, who is making new year's resolutions this year? I haven't decided if I will or not as I can't think of anything right now that I need to change other than my weight. If you are setting a new year's resolution this year I would love to hear what it is.

Long Week

Well I think today I learned a very valuable lesson. My anxiety has been pretty non-existent for the last few weeks and it appears that because of this I have forgotten to take my medication for the last 4 days or so (this is approximately the last time I remember taking them). So, today, I woke with a panic attack at 5 am. My anxiety level has since then been pretty high today. I did take my meds today but after being off of them for almost a week it doesn't seem to be doing much good.

I have spent the day trying to use mindfulness to help with the anxiety and even this does not seem to be working today :( It appears nothing that I usually fall back on wants to be effective today. Oh well such is life I guess. We have to take the good with the bad. There's always tomorrow to get things done....

What do you do when nothing that usually works appears to work? Any suggestions would be greatly appreciated.

Are you Ready?

Well Christmas is almost here! Are you ready? Have you done all your shopping, shipping, and baking?

This week has already been crazy and it's only Monday! I finally got most of my baking done. Still a little to do but I'm close enough I think that I can take the day off. Of course that means I will have to work overtime for the next couple days to get it all done...LOL. We decided to go with mostly home made gifts this year with trying to get back to what Christmas is supposed to be about. To quote a commercial that has been playing lately we are trying to "make the 4 letter word of the season L-O-V-E instead of S-A-L-E." I did buy some gifts. Of course we can't get away from that entirely. I just want to remember Christmas as a time of joy rather than hectic shopping season. I guess this a part of trying to slow down a bit.
